- When a cake is freshly baked, it needs time to set. Keep the cake in its pan and let it cool on a rack for the time the recipe specifies - usually 15-20 minutes - before attempting to remove it.
- Try not to let it cool completely before removing it. Most cakes are best unmolded from their pan while they are still warm, otherwise they tend to stick.
- To remove, run a sharp thin-bladed knife around the cake's edges. Place your cooling rack over the cake and invert the cake onto the rack before cooling completely. If you're baking the cake in a springform pan, simply remove the sides before the cake has fully cooled.
- If you're worried the top of the cake will be damaged, you can flip it a second time so it's not upside down on the rack. This is done easily by lining a plate with a piece of parchment paper and placing the plate on top of the cake. Invert the cake onto the lined plate, then put the cooling rack on the bottom of the cake and hold it firmly so it's sandwiched between the cooling rack and the plate. Gently flip it so it is right side up on the cooling rack. Remove the parchment paper and let it cool completely.
- If, however, the cake cools fully before you unmold it from the pan, it may be difficult to remove. You can solve this by putting it back in the oven at 325°F (160°C) for 3-5 minutes, to warm it slightly before trying to invert it again.
